A Delicious Summer Side Dish You Need To Try!
Sicilian Cucumber and Tomato Salad
This Italian salad has been one of my favorite side dishes paired with dinner or lunch in Summer! Tomatoes are at it's peak currently, so this recipe is a great use for the juicy red gems. A tomato and cucumber salad doesn't only taste delicious but it's incredibly refreshing and cooling on a hot summer day!

4 Heirloom Tomatoes
4 mini Cucumbers
3 cloves of minced Garlic
1 Scallion thinly sliced
1 bunch of roughly chopped basil
1 stick of minced rosemary
6 leaves of finely chopped mint
4 tablespoons of Olive Oil
1/2 tablespoon of Black Truffle Oil- optional
3 tablespoons of Red Wine Vinegar
2 tablespoons of of Balsamic Vinegar
1/2 tablespoon of Lemon Zest
1/2 of a fresh squeezed Lemon
Salt and Pepper to taste
Combine all ingredients for dressing in a bowl and whisk until combined. Set aside in a bowl or a mason jar and shake to further combine the flavors.
Chop all vegetables, garlic, scallion and herbs accordingly and place into a separate bowl from the dressing.
Dress and toss salad gently. Serve immediately or refrigerate to keep cool and allow the flavors to develop even more.
